01 Preheat the oven to 180°C/350°F/gas mark 4. Mix both flours and ½ teaspoon of salt together in a bowl while slowly adding the warm water until the mixture forms a ball of dough, then knead the dough ball until it's completely smooth.
02 Divide the dough into 8 small portions. Place a portion between 2 pieces of parchment paper and roll out as thinly as possible, ideally 2mm thick. Try to form an even disc. set aside and repeat with the remaining portions.
03 Toast each rolled-out portion of dough in a dry, non-stick pan until golden brown on both sides, then cut the toasted dough into triangular sections and sprinkle lightly with olive oil and salt and pepper.
04 Place the tortillas on a non-stick baking tray and bake in the hot oven for 6-8 minutes until golden brown and crispy. allow to cool.
05 Meanwhile, make the salsa. Place all the ingredients in a bowl, season with salt and black pepper and mix together.
Serve, sprinkled with a little salt and the salsa on the side. These tortilla chips can be stored for 2-3 days in an air tight container in a cool place.

- 100g/3½oz/scant 1 cup masa harina golden cornflour
- 50g/1¾oz/scant¼ cup mealworm flour
- 1 tsp salt
- 100-115ml/3½-4floz/ scant ½-½ warm water
- olive oil, for sprinkling
- FOR THE SALSA
- 2 beef tomatoes, stems removed, diced
- ½ red onion, diced
- 1 bird's eye chilli, sliced
- juice of 1 lime
- 1 tsp chopped coriander
- a pinch of ground cumin
- salt and freshly ground black pepper (to taste)

Mealworms are not only delicious they are also packed full of high quality nutrients. These chips are just as more-ish as their cornflour counterparts and make for a tasty pre-dinner snack. Serve with fresh salsa and a sprinkling of salt.
