MEALWORM SHAKSHUKA

01 Heat the olive oil in a large, lidded frying pan. Add the garlic and chilli flakes and fry for one minute.

02 Add the onions and peppers and season with salt and pepper. Cook on a medium heat until just softened. Sprinkle in the cumin and paprika. Stir in the tomato and cook for a couple more minutes until the paste starts to separate. Add the tomatoes with a splash of water

03 Simmer for 10 minutes, uncovered, until reduced a little. Taste after 5 minutes and add a little sugar if you think the tomatoes need it. Keep an eye on the texture – you don’t want it runny, but it mustn’t get too dry, either. Add another splash of water if necessary. When the sauce is reduced, stir in the herbs.

04 Make 3 small wells in the sauce. Break an egg and drop carefully into a well, repeat with the remaining eggs. Cook for a few more minutes until the whites are just set and the yolks are still runny. Sprinkle over the remaining coriander. Serve with yogurt or labneh on the side

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 1 large red bell pepper, chopped
  • ¼ teaspoon fine sea salt
  • 3 cloves garlic, pressed or minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • 1 can crushed tomatoes
  • 2 tablespoons chopped fresh coriander, plus additional coriander for garnish
  • Freshly ground black pepper, to taste
  • 4 eggs

Mealworms are not only delicious they are also packed full of high quality nutrients. Our favourite thing about this dish is it’s so simple and very quick. So making healthier choices with a busy schedule even easier. We think this is a dish for two, but hey who’s judging? You can eat the whole lot, completely guilt free. Or keep some for lunch the next day.
